French Ham Shepherd's Pie

- 2 1/4 pounds of potatoes peeled and cut into pieces
- 1/2 cup of heavy whipping cream
- 3 Tbsp. of butter soft
- Dash of ground nutmeg
- Dash of salt and black pepper
- 2 Tbsp. of extra virgin olive oil
- 1 onion chopped
- 1 1/2 pound of leeks thinly sliced
- 2 tomatoes peeled, seeds removed and chopped
- 1 1/2 pounds of ham sliced
- 1 egg yolk beaten
- 1/4 cup of mozzarella cheese shredded and optional
Preheat the oven to 375 degrees. Grease a casserole dish with cooking spray.
In a pot set over medium to high heat, fill with water. Allow to come to a boil and season with a dash of salt. Add in the potatoes and cook for
15 minutes or until soft. Drain and chop into small pieces. Transfer into a bowl.
In the bowl, add in the heavy whipping cream, soft butter and ground nutmeg. Season with a dash of salt and black pepper. Mash until smooth in consistency.
In a pan set over medium heat, add in the oil. Add in the onion and cook for 5 minutes or until soft. Add in the sliced leeks and continue to cook for an additional minute.
Add in the chopped tomato and lower the heat to low. Cook for 5 minutes before adding in the ham. Season with another dash of salt and black pepper.
Spread half of the mashed potatoes into the casserole dish. Add the leek sauce over the top. Top off with the remaining mashed potatoes.
Brush the top with the beaten egg yolk and sprinkle the shredded mozzarella cheese over the top if you are using it.
Place into the oven to bake for 20 minutes. Remove and cool for 10 minutes before serving.
