French Ham Shepherd's Pie

Ingredients
  

  • 2 1/4 pounds of potatoes peeled and cut into pieces
  • 1/2 cup of heavy whipping cream
  • 3 Tbsp. of butter soft
  • Dash of ground nutmeg
  • Dash of salt and black pepper
  • 2 Tbsp. of extra virgin olive oil
  • 1 onion chopped
  • 1 1/2 pound of leeks thinly sliced
  • 2 tomatoes peeled, seeds removed and chopped
  • 1 1/2 pounds of ham sliced
  • 1 egg yolk beaten
  • 1/4 cup of mozzarella cheese shredded and optional

Instructions
 

  • Preheat the oven to 375 degrees. Grease a casserole dish with cooking spray.
  • In a pot set over medium to high heat, fill with water. Allow to come to a boil and season with a dash of salt. Add in the potatoes and cook for
  • 15 minutes or until soft. Drain and chop into small pieces. Transfer into a bowl.
  • In the bowl, add in the heavy whipping cream, soft butter and ground nutmeg. Season with a dash of salt and black pepper. Mash until smooth in consistency.
  • In a pan set over medium heat, add in the oil. Add in the onion and cook for 5 minutes or until soft. Add in the sliced leeks and continue to cook for an additional minute.
  • Add in the chopped tomato and lower the heat to low. Cook for 5 minutes before adding in the ham. Season with another dash of salt and black pepper.
  • Spread half of the mashed potatoes into the casserole dish. Add the leek sauce over the top. Top off with the remaining mashed potatoes.
  • Brush the top with the beaten egg yolk and sprinkle the shredded mozzarella cheese over the top if you are using it.
  • Place into the oven to bake for 20 minutes. Remove and cool for 10 minutes before serving.
