Ingredients
  

  • 1 Tbsp. of extra virgin olive oil
  • 1 onion chopped
  • 4 to 5 strips of bacon chopped
  • 4 cloves of garlic sliced
  • 8 chicken thighs boneless and skinless
  • 1 cup of cremini mushrooms cut into halves
  • 2 1/4 cups of chardonnay
  • 1 cup of heavy whipping cream
  • Dash of salt and black pepper
  • Parsley chopped and for garnish

Instructions
 

  • In a skillet set over medium heat, add in the chopped bacon. Cook for 5 minutes. Transfer onto a plate to drain.
  • Season the chicken thighs with a dash of salt and black pepper. Add into the skillet and cook for 8 to 10 minutes or until browned. Remove and transfer onto a plate.
  • Add in the chopped onions. Cook for 5 minutes. Add in the sliced garlic and cook for an additional minute. Remove and transfer onto the plate with the chicken.
  • Add in the mushroom halves and cook for 5 minutes.
  • Add the chicken, onions, garlic and bacon back into the skillet. Stir well to mix. Pour the chardonnay over the top. Allow to come to a boil. Lower the heat to low and cook for 40 minutes.
  • Add in the heavy whipping cream and cook for 10 minutes.
  • Remove from heat and garnish with the chopped parsley. Serve immediately.

The bone adds extra flavor to the dish, while the skin helps keep the chicken moist and tender during the slow cooking process.
